We start our fifth week looking back on a brilliant month and looking forward with new ideas and a serious passion for food! I am humbled with the continued support from everyone and our producers. The open kitchen has been a hit!
Today, the pasta machine arrived and will become one of the most important tools as we develop the dishes day by day. Once upon a time I used to make squid ink breadsticks which I adored. The idea of the “crunch” brings happiness. That’s why we all enjoy crisps. It’s the ultimate texture for our senses. They also remind me of the sea and my experiences on the Island.
